Gazpacho originates from the Andalusian region of Spain and is a refreshing soup made from pureed ripened tomatoes, cucumber, green peppers, garlic, extra virgin olive oil and sherry vinegar. It is served cold and, during the summer months, is a staple of the Spanish diet. It can be enjoyed as an appetizer, main meal or simply a delicious healthy snack!
